Book Summary

Boo-boo Bistro Chicken
This is the recipe I made using thyme which my daughter thought could heal her cut.
Everyone in my family loves this and it’s super easy. Best of all, you can buy the chicken in bulk, rub the spices on ahead of time and freeze it. When you know you won’t have time to cook, defrost prepared chicken thighs overnight in the refrigerator then put in the oven an hour and fifteen minutes before dinner.


Serves 4. Cook time: 1 hour and 15 minutes.
 

4 chicken thighs
2 t. dried basil
2 t. dried thyme
2 t. dried rosemary, crushed
4 t. olive oil
1 t. salt
1/2 t. pepper
4 garlic heads
4-8 rolls


Preheat over to 375 degrees. Combine spices-- basil through pepper. Loosen skin from thigh
with fingers then rub the spices under skin. Line bottom of broiler pan with foil to ease clean-up, then place chicken on broiler rack in pan. Remove papery skin from garlic heads, keeping cloves together. Cut off tip of garlic. Wrap each head separately in foil and place on broiler pan with chicken. Bake for 45 minutes. Increase oven temperature to 450 and bake 20 minutes more.
 

Remove from oven, cover chicken loosely with foil and wait 10 minutes. This is when I bake the rolls. If you want to be healthy, discard the skin on chicken. (My husband likes to eat the skin, but the chicken is so juicy and flavorful, you don’t need it.) Squeeze garlic onto rolls.

My Review

This was a really fast, cute read and you get to know the author through this book a bit. The author sets the book up with short stories, memories of being a mom. It is a great little book for when you have a few minutes here and there as you can easily pick it up and read for 5 minutes one story and then come back to it later. Following each short story is either a recipe or an activity, questions you can do for or with your family/kids.  It really made me smile especially the band aid story as my daughter will have the smallest ouch and if a band aid is placed on it she is all better. She really would use them all up if she wasn't watched, even now at almost 6 years old. Funny when we really need one though we can't find one or have to put a kid band aid on my or dad. Super tasty recipes are also included like Boo-boo Bistro Chicken and activities/crafts that most kids will love to do especially with the cooler weather around the corner.  I love that most of the activities and recipes you will already have things in the house or they can be easily found in the stores. 

I give this book a 4 out of 5 stars
