Marvelous Menu Monday Feb 27-Mar 4,2012

We are heading into a new month in a couple of days. Can you imagine we are at the end of February already? This month seemed to just fly by. I can not wait until Summer and it can't seem to come fast enough for me. We had really nice weather here, almost spring like and then Poof another dumping of snow! Go figure I am in Canada!!
I am hoping this year we will be able to plant a bit more than just tomatoes. I would love a huge garden but we need a bigger yard for that. If not, I will be venturing out to the farmer's market more this year. I am also thinking of having a table at our local market for hair clips and bake goods.

Richard Scarry's Busytown Busy Guest Post

Chocolate Chip Fudgie Cup with @EqualCanada

On Saturday we went out to pick up our groceries and were on a mission to find a Yellow canister of Equal to make these tasty Chocolate Chip Fudgie Cups from their Facebook recipe finder.

Now on to the tasty recipe. These are made of two parts; bottom is cookie and the top is brownie. Enjoy!


Chocolate Chip Fudgie Cups

Ingredients:

Chocolate Chip Dough:
1/3 cup stick butter, softened
1 egg
1 teaspoon vanilla
1/3 cup Equal Spoonful or Granulated*
1/3 cup firmly packed brown sugar
1 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup mini semi-sweet chocolate chips

Fudge Nut Filling:
1 cup Equal® Spoonful or Granulated**
3/4 cup all-purpose flour
6 tablespoons unsweetened cocoa
1/3 cup chopped nuts
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsweetened applesauce
6 tablespoons stick butter, softened
2 eggs
1 teaspoon vanilla

*May substitute 8 packets Equal sweetener
**May substitute 24 packets Equal sweetener

Directions:

Chocolate Chip Dough:
Beat butter with electric mixer until fluffy.
Beat in egg and vanilla until blended.
Mix in Equal* and brown sugar until combined.
In a small bowl combine flour, baking soda, and salt. Mix into butter mixture.
Stir in chocolate chips.
Form dough into circle about 1/2-inch thick. Wrap tightly in plastic wrap and freeze while preparing Fudge Nut Filling.

Fudge Nut Filling:
Combine Equal**, flour, cocoa, nuts, baking powder and salt.
Beat applesauce, butter, eggs and vanilla until blended.
Stir in combined flour mixture until well blended.

Remove Chocolate Chip Dough from freezer.
Spread approximately 1 rounded tablespoonful of dough in each of 24 mini-muffin pans.
Fill each with Fudge Nut Filling to top of cup.

Bake in preheated 350° F oven 15 to 18 minutes or until wooden pick inserted in center comes out clean. Let cool in muffin pans about 5 minutes. Remove from pans and cool completely on wire racks.
Store in airtight containers at room temperature.
These turned out really good. Very moist and tasty even though we ran into a chocolate chip dilemma and ended up substituting chocolate chip with mint chocolate chip. I would love to try them with just regular chocolate chips. We will make these again for sure. They got 2 thumbs up from everyone in the family!

Sweets with less sugar, Yet still Yummy! @EqualCanada #Cbias

We do our groceries usually once a week, Saturdays or Sundays. This weekend we decided we would be going Saturday as Sunday we have a few other plans (will be guest posting about this soon!). It is just the kids and myself as hubby is working this weekend.
This week we didn't need a ton of groceries just what was a sale and also decided we would make Chocolate Chip Fudgie Cups from the #EqualCanada Facebook recipe finder. This looks tasty and doesn't seem hard to make. Right now I am looking for less sugary snack for myself as I am trying to maintain a healthy weight and be fit.

Hasbro Operation & Twister Game Review

My children are game kids, pc, handheld, Wii, and board games. They love them all. On Family Day they were introduce to a bunch of board games that they have never played. Today I want to tell you about the Hasbro board games Operation and Twister.

Operation (ages 6+) is a silly game that features barks, burps, cell phone rings and more. Each play is a Dr. and needs to operate by carefully taking the tweezers and keeping their hand steady remove each funny object in Cavity Sam. What is that? A bird! Did you hear a toilet flushing? Each turn will be a new sound and the play will try to remove that item without being buzzed at. If you get buzzed pass the tweezers to the next player.
Both my kids love this game but I think my daughter loves it more. She has been caught pulling it out to play by herself and then her brother will hear it and come to play. Both of them have had many giggles playing together and with mommy and daddy. I love that there are different levels with it, 1 is less sensitive to set of the buzz when you touch the edge with the tweezers when trying to remove a piece. We also made our own rule as the kids are just learning that on the second buzz they have to pass the tweezers. This is a great way to work on fine motor skills for anyone.
 
Next game we tried out during our Family day weekend was Twister (ages 6+). We have only play a few times but the kids think it is a lot of fun and have enjoyed being Twisted and seeing who can stay standing. If you haven't play this game you don't know what your missing. This is a lot of fun have someone spin the spinner and follow the spinners directions maybe this time it is Right hand on Red. Can you make it there without falling over or getting to twister with the other players? Last person standing is the winner. 

This is a great game for young children to learn about left, right and taking turns. We have been having a blast and can't wait to share more great Hasbro board games with you.

Marvelous Mommy Meals

Just over two months ago I decided to take the plunge and start another blog. Yes, I know that is a very crazy thought as I am a work at side the home mom of two under 6. When will I ever find the time to blog on two blogs? Well I figured I am cooking and baking already why not snap some pictures and post. Can't be that hard, right?

I have ALWAYS been a baker growing up. I love to make cookies, cupcakes, pies and really any other sweet treats. Over the last couple years I have formed a love for cooking all together. From basic breakfasts - like homemade waffles & pancakes to breakfast burritos, comfort food and new dishes I have never made before.

Usually Wordless Wednesday is a picture or pictures that are stand alone, that speak without words. Today I have a few I would like to share from Shrove Tuesday but with a few words attached.

My little helper, first time cracking eggs and I must say she did a great job and only drop the whole egg shell in once! No little shells, must have been luck.
Got thumbs of up for our tasty Boots's Banana Pancakes! We will be reviewing Dora & Diego Let's Cook during Kids Week in March.

Did you have pancakes on Shrove Tuesday? What did you give up for Lent? I am giving up Pop, I wish I could say caffeine but I would fail at this for sure!

The other day on Twitter @DoritosCanada asked "In celebration of the Doritos Taco Time Machine, we want to know: What was the #1 song, on the day you were born?"

Well I just had to look. Why wouldn't I want to see what was Hot on December 19th, 1981. 30 years ago Olivia Newton-John had the #1 song on the US Billboards "Physical". Cheese Stuffed Meatballs ~ Recipe

Do you love meatballs? We love meatballs and I have been looking for a fun new recipe to try out. Just the other day I posted a review/giveaway for Menu For The Week which is a menu planning online service. This is one of the great recipes that Dawn uses that combines Beef and Cheese to make very tasty Cheese stuffed meatballs. You can use your favorite meatball recipe and just add cheese.

Cheese Stuffed Meatballs 

Ingredients:

1 lb ground beef
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 cup bread crumbs
3 mozzarella string cheese (we used block cheese and it was Old Cheddar)
3 tablespoons olive oil

Directions:
  1. In a large bowl, combine meat, bread crumbs and seasonings. 
  2. Cut string cheese into about 6 chunks each. 
  3. Make 1/2" in diameter meatballs formed around string cheese chunk.
  4. Over medium heat, heat olive oil in a large skillet. Brown meatballs on all sides. Be sure oil is hot or meatballs will stick.
  5. Serve over spaghetti or rice.
This was a really nice change to our regular meatballs. The kids also loved them and asked for seconds. We served ours with pasta sauce and spaghetti. Very tasty and we will be having this again. These were very easy to make and can be made with your favorite meatball recipe. We didn't have cheese strings so we chopped up block cheese as we always have this in the house.
I would love to attend the Eat, Write, Retreat conference in May to learn more about cooking, taking wonderful pictures and meeting other great food bloggers and brands. For the next two Mondays Canadian Beef is giving people the chance to attend this great conference compliments of Canadian Beef scholarship (This is a paid ticket to the conference). Here's hoping Marvelous Mommy Meals will be heading to Washington DC in May!

Family Day 2012 with Hasbro Game Day!

Monday is Family Day and we are planning a nice quiet day at home. Okay who am I kidding? We are planning a fun filled day that will likely be LOUD! Our plans? Games, crafts and maybe some baking.

Tassimo Recalls

I am sure by now you have heard that some of the Tassimo brewers have been recalled, if you haven't and own a Tassimo it is very easy to find out if yours has been recalled. Mine is one that is in the recall, boo.

Tassimo has set up a site exclusive to the recall and you can find out which brewers and T-discs have been recalled on the website.

It is an easy fix and you don't have to send your brewer back. Finding out is easy:
1. Locate the data tag, which can be found on the bottom of your brewer.
2. Note the Model # beginning with ‘TAS’.
3. Note the FD Date Code beginning with an “8 or 9”.
4. Enter the information in the fields to the right and click Submit.

This information is entered into the website and then you will be asked for your mailing address and phone number. The piece that needs to be changed will arrive in 7-10 as the website stats.

Also don't forget to check out your T-Discs when you are on the site.

The more I talk to people about menu planning one common thing I hear is that people feel menu planning is too hard, takes too much time and they couldn't be bothered. Well how many times to you get home from work and know in a couple hours you have to be out the door again or come home and really can't think of what to make. How about when you finally think about what you and your family will eat and then realize you are missing ingredients?

The best part of menu planning is that you will save time, money and energy. Now some people like to plan a month in advance but I would say when you are first starting out to start a week at a time. Another great idea for beginners at menu planning is to sign up with a menu planning service. Menufortheweek.com is a menu plan service that takes all the work out of planning out your meals.
This site works great for people who want all the work taken out of menu planning. Each week a new menu is posted on the site where you login and download the menu. You have a choice of a menu with pictures or one without for printing. I suggest getting a binder and each week adding the new recipes in it. This way it is easy to find a recipe that your family loved.

Menu For the Week gives you each week a menu consisting of 5 dinners, 1 dessert and a bonus recipe. It also includes a grocery list at the end for everything you will need for the week of menu's. This is great as it takes all the guessing out of what's for dinner. The only downside it you can't be a picky eater to use this. If you want you can download older menus and mix and match but then the grocery list will need to be adjusted.

There is also a new Menu for the Week for Vegetarians over on VegForTheWeek.com. Great options for both groups of eaters.

Fit N Firm Friday Week 4 set back

Well I hate to admit it but I haven't pulled out the Zumba this week. I hope this isn't going to be a pattern. I haven't been able to shake this cold it only went into my chest and I have a lot of coughing. I was sort of afraid to push the work outs. Yes it does really sound like an excuse, maybe it is but this week hasn't been the greatest health wise and being over tired.

Next week I hope will be a lot better. On a good note I have been watching my food intake and have been doing pretty good at moderation. The cutting back on caffeine has been still hard but there were some days that I only had 2 coffees and a decaf tea.

I am also looking for easy, inexpensive recipes that are kosher for work to have on hand for my overnights. I am right now sticking to popcorn and Special K. Both I know are good but I would love a couple other things. I try to drink flavored decaf teas when I am feeling the need to eat at night but right now we need to get another box (the one they bought last week, not a fave, sorry guys if you are reading this).

I weighed myself today and looking on the bright side I haven't gained anything but I also haven't lost anything. I am not working on losing much maybe 5-10lbs but more or less getting physically fit and heart healthy.

Celtic Woman - Believe #Giveaway!

Homemade Hamburger Helper

This recipe was found online a couple years back and I can't remember where I found it. If this is your recipe please let me know, so I can give you credit. It is a wonderful recipe, very easy to make from scratch. This recipe is as easy as making Hamburger Helper from the box except you can decide what goes inside.

Most of the time we have all the ingredients in the house and you could always prep a bunch in small snack bags for other times. This would make it just like making it from the box.

This is the recipe for Chili Hamburger Helper
Ingredients:
1 lb ground beef
1 cup hot water
2 cups milk
1 1/2 cups elbow macaroni
1 Tbsp corn starch
1 Tbsp chili powder
1 tsp garlic powder
1 tsp salt
1 tsp sugar
1/2 tsp paprika
1 cup cheddar cheese, shredded

Directions:
  1. Brown ground beef in a large skillet; drain.
  2. While browning ground beef - mix corn starch, chili powder, garlic powder, salt, sugar and paprika together; set aside
  3. Add hot water, milk, pasta and your homemade sauce packet (corn starch, chili powder, garlic powder, salt, sugar and paprika)
  4. Bring to a boil.
  5. Cover and simmer on low about 12 minutes, stirring occasionally, until pasta is tender.
  6. Add Cheese in the last few minutes or wait and add just before serving, it is really up to you.
  7. Serve and Enjoy!
As I type this I am dreaming of going to Eat, Write, Retreat which is a Foodie Conference in Washington DC. I have never been to a Foodie conference or DC and would love to travel in a plane for the first time to something like this! I also am so happy to say that Canadian Beef is offering a chance for a paid ticket to this great conference!

Truth or Dare: February 14th, 2012

This week I am going with Truth again. I know I haven't done a dare yet but I just wasn't sure of a Talent to blog about. Maybe next week you never know maybe I will be brave enough for Dare....

The truth for this week is - Tell us what you really want for Valentine's Day. A date with your husband? Jewels? Chocolate? Time just for you?

I would love a really nice romantic evening at home with hubby, kids at a sitters (sorry A & P). Nice meal together that maybe we made together, nice glass of wine and an nice early to bed. 

Nothing fancy just some nice quality time together just hubby and I. Nice and quiet........

We wont get that this year as I am working tonight and worked overnight last night and other family things that can not be changed but oh well another day. Love should be showed daily not just on Valentine's Day and I did get us a really good deal at a hotel that needs to be used before the end of June.

Italian-Style Hamburger Soup @CanadianBeef

This past week I haven't been feeling really well at all. When I am under the weather as a child my mom would make a "sick" soup this soup consisted of milk, diced tomatoes, and elbow macaroni. As an adult I have grow to love soups especially during our cold winters in Canada. I love my soup more on the lines of stew. I love a hearty soup.

This had me thinking about soups we haven't had in awhile and we just got our meat order in and had plenty of ground beef. I decided to see if I could find Hamburger soup recipe on the Canadian Beef website.

I found a very tasty looking Italian-Style Hamburger Soup recipe but I was lacking a small can of pasta sauce. Hmm... as I looked at my pantry shelf I thought I will just try tomato paste. I also had just over a 1/2 cup of alphabet noodles that I wanted to use up; I used those instead of spaghetti broken.

Italian-Style Hamburger Soup

Ingredients:

1lb Extra lean or lean ground beef sirloin or round
1 large onion, chopped
4 garlic cloves, minced
1 cup (250ml) Each thinly sliced carrot, celery and zucchini
1 1/2 tsp (7ml) dried Italian herb seasoning
1/4 tsp (1 ml)chili pepper flakes (optional)
1can (28 oz/796 ml) diced tomatoes
1pkg (900 ml) sodium-reduced chicken broth
1can (213 ml) tomato sauce
1 cup (250 ml)shredded fresh spinach (optional)
1/4 cup (50 ml) chopped fresh parsley (optional)
1/2 cup (125 ml) broken whole wheat spaghetti

Directions:

Cook beef, onion, garlic, carrot, celery, zucchini, Italian seasoning and chili pepper flakes in a Dutch oven over medium-high heat for 10 to 15 minutes until meat is thoroughly cooked and any liquid has evaporated.
Add tomatoes, broth and tomato sauce; bring to a boil. Reduce heat and simmer for 15 minutes.
Add spinach and parsley; stir in pasta; simmer 10 minutes longer or until pasta is tender.

This turned out really tasty and everyone enjoyed it. It is easy to make and pretty quick for a weekday night. We will have it again soon.
