Comfort Food - Recipes for Fall #LMDConnector

I always say to myself (co-workers, friends, family and readers) slow cookers are not just for fall/winter but can be used all year round to help busy families get a healthy tasty meal on the table with a little prep. I still for the life of me can't get out of my head how slow cookers are so wonderful during the fall/winter to make the comfort foods I love during the cold weather.

What do I use my slow cooker for? I love chili, stews, roasts and anything else I can pretty much dump into the pot and let cook all day! In the new year I plan to use my slow cooker more often even during the warm months to help with the crazy busy days. There are so many easy, tasty slow cooker recipes online you could try one daily for years to come.

Yesterday was a PA day at kids school. I had a ton of things I wanted to do with the kids so I decided why not make a yummy stew in the slow cooker. I have tons of veggies to use up and some stewing beef in the freezer. 

This recipe is my throw everything in slow cooker pot and let it cook. Nothing is measured and you can change it to tailor what you have on hand.

Easy Slow Cooker Beef Stew

Stewing beef (cubed in bite size pieces)
Carrots (slices thin - they cook faster) or baby carrots
Cubed potatoes
Sliced celery
Sliced Mushrooms
Onions sliced (or diced if you have picky eaters)
Peppers (red, green whatever you have on hand, diced)
Beef broth (enough to cover food in slow cooker)

Easiest directions in the world - Chop everything and toss in slow cooker, cover with beef broth until beef and veggies are covered. Slow cook on low for 6-8 hours. If you find it a little runny you can always add a little bit of cornstarch to a bit of the water to thicken it in the last 20 minutes.
