Apple Banana Bread with Rice Flour ~ Recipe

Here is another recipe from the Grain Mill blogger Challenge back in late 2012! Wow, has time really flown by. I had this recipe sitting in the blogs draft folder since then!

Our Family favorite bread is Banana bread and we have a go to recipe that I have been using for years. This recipe I came across one day in a fundraising cookbook for Bell Canada from 1999. I picked up the cookbook in a thrift store as I saw a few dinner recipes I was interested in trying out.

It is a really simple and quick recipe and your family will be sure to love it.
First you will need to use your WonderMill to make rice flour. I used 2 1/2 cups of white rice to make 2 1/2 cups of rice flour.

Ingredients:

3/4 cup white sugar
3/4 cup brown sugar
1/2 cup margarine
2 large bananas, mashed
2 eggs, beaten

1 tsp salt
1 tsp baking soda
1 tsp baking powder
1 tsp vanilla
2 1/2 cups  rice flour
1 cup milk
1 large apple, peeled, cored and chopped

Directions:
  1. Preheat oven to 325 F.
  2. Cream together white sugar, brown sugar and margarine.
  3. Add mashed bananas, eggs, baking soda, baking powder, vanilla and salt.
  4. Add rice flour and milk alternately.
  5. Stir in apples.
  6. Bake for 1 hour.

I will admit I did find my hand in the chocolate bag a few times. It is okay, enjoy the treat and move on. No need to beat ourselves up over it. One thing I like to keep on hand is protein chocolate. I make a few batches and put them in the fridge for when I am craving that sweet treat.

They are super easy to make and they can be made a number of ways. Today I will share my basic Chocolate Peanut Butter cups with Garden of Life Raw Protein and BetterBody Foods Coconut oil and PBFit Peanut Butter.

1 scoop of Garden of Life Raw Protein (any flavor you choose) or Organic Plant Protein.
1 Tbsp BetterBody Coconut Oil
2 Tbsp PBFit
1 Tbsp water
Directions:

1. Mix 2 Tbsp of PBFit with 1 Tbsp water in a small bowl. Set aside.
2. In a glass bowl or measuring cup melt 1 Tbsp of coconut oil in the microwave (time depending on your microwave but I usually do 15 secs at a time til melted).
3. Add 1 level scoop of your choice of Protein powder to the melted coconut oil and stir.
4. Pour/spoon into molds or onto parchment paper on a cookie sheet or plate.
5. Add a tsp of Peanut Butter to each chocolate mold.
6. Freeze for 10-15 minutes and voila you have some healthy chocolate peanut butter cups!

Apple Raisin Cinnamon Oatmeal Muffin Recipe

Source: Clipartbest.com
With Apples everywhere you turn right now I thought it would be a great time to make a new Apple muffin recipe.

Now that I have kicked into full swing with my fitness workouts I thought this would be a great time to find the time and energy to start baking again. I still eat treats here and there and it will be great to know what I am eating.

I love making muffins and I also love playing around with different recipes. Usually I will find something that looks good and will start adding or removing ingredients to make it more of something my family will like or healthier.

Ingredients:

1 1/2 cup all-purpose flour
1 cup quick oats
2/3 cup brown sugar, firmly packed
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 cup milk or 1/2 cup of each milk & water
2 Tbsp vegetable oil
2 cup apple, peeled and cut into chunks (about 2 medium apples)
1/2 cup raisins that had been soaked in hot water.

Directions:

Preheat oven to 375F.
In a small bowl cover raisins with hot water and let soak while making batter.
Mix dry ingredients together in a large bowl, add milk/water and vegetable oil. Fold in apples and raisins (drain water off raisins before folding in to batter). Be sure not to over mix batter.
Pour batter into greased/lined muffin tin.
Cook for 12-15 minutes or until toothpick comes out clean. Makes 12 regular sized muffins

Taco Pasta Bake Recipe

I decided to post a this picture to Instagram one night as I was sitting down to dinner and got a request about sharing the recipe. Recipe? huh? I didn't have one as I just through it all together as I went. So here is how this all came about......

A few weeks ago I was totally lost for what to make for dinner. I really need to get back into my Meal Planning. I looked around at what I had in the kitchen and freezer and decided I was going to make something with pasta and ground beef. Now other than that I had no idea what I wanted to make until I started thinking about what I wanted for veggies and that is where the Taco Pasta Bake came to life.

Taco Pasta Bake
Serves 4.

Ingredients:
2 cup spiral pasta or scooby doo pasta
1 cup of salsa (we used medium), you could also substitute with canned diced tomatoes
1 cup frozen corn
1 Tbsp Chili or Taco seasoning (you can add more if you like a spicy chili taste)
1 cup shredded cheese (you can add more to your liking, I think I did. I just made sure it was well covered)
1 can black beans 19oz/540ml (drained and rinsed well)
1 lb. ground beef browned and drained

Directions:
  1. Bring a pot of water to a boil and add pasta. Cook for 8 minutes. You don't want to over cook it as it will go into the oven to bake.
  2. While your pasta is cooking brown your ground beef in a frying pan until brown and drain grease.
  3. Preheat oven to 350F
  4. Drain pasta and add to big mixing bowl
  5. Add ground beef, salsa, corn, chili powder, black beans and mix well.
  6. Pour into a casserole dish - mine was a 8x11.5
  7. Cover with shredded cheese.
  8. Bake for 25 to 30 minutes. Here is where you can decide how long you want to bake as you want to warm your casserole and melt the cheese.
  9. Enjoy! Watch your children and hubby ask for seconds.

Finding Recipes

I get this question all the time, "Where can I find recipes that are quick, easy and are free?" I always answer "Go online". I love my recipe books and I will admit to having a huge collection, I can not give up my recipe books just something about having them all printed and so nice. If you don't want a huge book collection and are looking for free recipes there are tons online. I also get people telling me that they have tried some and they didn't turn out well. I usually suggest going to trusted sites that are put together by a company or a blogger who has tried the recipe and then posted it.

What do you do when you find great recipes? Do you just book mark them? No, I have taken a big three ring binder and turned it into a family recipe book. I then divided it into sections like breakfast, muffins, cookies/cakes, meat, soups etc. Over the last few years I have added to this book whenever we find another great recipe. This can be from one of my cookbooks or online. Which reminds me one day soon I should organize this binder again as it is over flowing and out of order. I am thinking of actually making two binders one for desserts and the other for meals. While I do this I can post about it also for everyone to see what it looks like, if you would like?

I have a bunch of sites I love to check when I an in need of a recipe. These include Kraft Canada, Allrecipes.com (this is a site where users post their recipes they love, I suggest you find users that have posted many and have reviews on them. Also I just found out that Shreddies has a partnership with them), Crock-Pot, Life Made Delicious and so many more.

This is a new site I just found while writing this post, if you use it let me know what you think - Recipe.com looks like all the recipes have been gathered from magazines, and online company sites.

I will keep reviewing recipes and adding them here so Marvelous Mommy Meals is another great place to find yummy recipes. I also love reading other food blogs.

Enjoy your tasty finds! I would love you to come back and share what you have tried.

~Jennifer
