Gluten Free Chex cereal

When P was a toddler he was having some problems with his stomach. We thought it may be related to milk and were advised to take him off all things dairy. Then our doctor decided we should take him to be tested for Celiac Disease. We took him to be tested and while waiting for the results to come back we tried to go more gluten free in our house. We were lucky in the end that it wasn't a gluten or milk intolerance but never really found out what was happening.

It has made me more aware of what we eat and I learned more about gluten. One in every 133 Canadians suffer from Celiac Disease. To me that is a pretty high number and if you look through the stores, especially in smaller towns it is hard to find a variety of gluten free products. Stats show that 71% of Canadians are looking for more gluten free products in the grocery stores. Just because you can't eat gluten products doesn't mean you should have no choice on foods.
Chex has announced their new Gluten free cereals in stores across Canada this summer. There are two delicious flavours which includes Chex Honey Nut and Rice. Recently we had the chance to try both cereals and we also received a black Chex apron, button, post it pad and a recipe booklet. 

We tried the Honey Nut first and it was very tasty and crunchy. The Rice one is very tasty also and great in a snack mix. The kids liked the Honey Nut the best but that is because it is very sweet and honey tasting. They also mixed both together and loved it. There are a lot of different ways to use Chex gluten free cereal. If you are interested in different recipes you can find them online at Life Made Delicious. Here is one that we are planning on trying.

Chex Cookie Pizza (Gluten Free)
Ingredients:
4 cups (1 L) Rice Chex* cereal
1/3 cup (75 mL) granulated sugar
1/3 cup (75 mL) packed brown sugar
1/3 cup (75 mL) peanut butter
1/4 cup (50 mL) butter or margarine, softened
1 tsp (5 mL) vanilla
1 egg, beaten
2 cups (500 mL) miniature marshmallows
1/4 cup (50 mL) miniature semisweet chocolate chips
2 tbsp (25 mL) coarsely chopped honey-roasted peanuts, if desired
Any gluten-free chewy fruit snacks


Method:
  • Heat oven to 375ºF. Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet.
  • In large bowl, mix sugars, peanut butter, butter, vanilla and egg. Stir in crushed cereal. Spread in ungreased 12-inch pizza pan.
  • Bake 12 minutes. Sprinkle evenly with marshmallows to within 1 inch of edge. Bake 5 minutes longer or until marshmallows are light golden brown. Sprinkle chocolate chips, peanuts and fruit snack pieces over marshmallows to look like pizza toppings. Cool completely on cooling rack. Cut into 16 wedges. Store tightly covered. 
*Please make sure you check all ingredients as sometimes they change and are no longer gluten free. 


Where to Buy: I have seen this in my local Independent and also in Loblaws. It usually sells for $5.49-$5.99 but I know some people have seen it on sale for $3.99. Please let me know where you found it and price. Thanks!

    Atlantic Superstore $4.19/box reg. price :)We have been purchasing for a while now and our little ones prefer it!
